Mongolian Beef
adapted from The Food Network, while trying desperately to remember how we used to make this dish ourselves. Ours was much simpler than theirs!

Ingredients
• 1-1½ lb. beef strips
• 2 tablespoons vegetable oil
• 2 tablespoons cornstarch
• 2 tablespoons soy sauce
• 1 teaspoon minced garlic
• brocolli and/or bell peppers of choice, chopped

Directions
➀ Heat oil to medium-high in medium saute pan. Stir in beef strips and cook to medium-rare, stirring constantly, for about 3 minutes. Drain off excess oil.
➁ Add the garlic, soy sauce and corn starch, as well as any vegetables you've prepared to add. Stir constantly and let it cook for about 4-5 minutes, until the sauce thickens and the vegetables soften.
➂ Serve over rice!
