Guacamole Deviled Eggs
adapted from multiple sources but originally discovered on Simply Recipes

Ingredients
• 6 large eggs, hard boiled
• 2 ripe Hass avocados
• 1 tablespoon jalapeño pepper, finely chopped¹
• 1 tablespoon red onion, finely chopped
• 1 tablespoon tomato, finely chopped
• 1 clove garlic, minced
• 1 tablespoon lime juice (approx. half a lime)
• 1 tablespoon chopped cilantro²
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• chili powder or paprika, for garnish

Directions
➀ Peel the hard boiled eggs, slice each in half lengthwise, then remove the yolks and put them in a large mixing bowl.
➁ Slice each avocado in half, remove the pit, and spoon the flesh into the mixing bowl. Mash avocado and egg yolks together until mostly smooth but with some chunks.
➂ Stir in tomato, onion, jalapeño (if desired), lime juice, garlic, cilantro, salt, and pepper. Now is an excellent time to have a taste, and tweak the ingredients to your liking.
➃ Spoon generous amount of guacamole mixture into the yolk divot of each egg white. Top with a pinch of chili powder or paprika.

Notes
➀ If you don't want it to be spicy at all, leave this out. Want more spice? Add more! Taste-testing as you go is recommended as jalapeños can vary a lot in their spice level.
➁ If you're one of the people for whom cilantro, also known as coriander leaves, tastes like soap, just leave it out! Maybe sub in some fresh parsley instead.
➂ Growing an avocado plant from the pit is fun, can be a cool science project for kids, and results in a neat little houseplant. With enough time and light you can eventually grow your own avocados! Now's an excellent time to give it a try!
